Description
A healthy twist on classic lasagna that uses zucchini instead of pasta, packed with lean protein and creamy ricotta cheese.
Ingredients

- 4 medium zucchinis, sliced lengthwise into 1/8 inch thick strips
- 1 lb lean ground turkey
- 1 cup low carb marinara sauce
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375ºF (190ºC).
- Slice the zucchinis and sprinkle them with salt. Let them sit for 10-15 minutes, then pat them dry.
- Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up as it cooks.
- Add minced garlic, half of the dried basil, and oregano, along with salt and pepper to the turkey. Cook for another 2 minutes.
- Stir in the marinara sauce to the turkey mixture and let it simmer for 5 minutes. Set aside.
- Combine ricotta cheese, 1 cup mozzarella, Parmesan cheese, eggs, and the remaining herbs in a mixing bowl.
- Spread a thin layer of meat sauce on the bottom of a 9×13 inch baking dish.
- Layer zucchini slices, overlapping slightly to cover the bottom of the dish.
- Spread 1/3 of the cheese mixture over the zucchini, followed by 1/3 of the meat sauce.
- Repeat the layers two more times, finishing with meat sauce on top.
- Sprinkle the remaining mozzarella cheese over the top.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
- Let the lasagna stand for 10-15 minutes before serving.
Notes
For a creamier texture, add more ricotta cheese or use a mix of cheeses. You can customize with spinach or mushrooms for extra nutrition.
