Description

A comforting Shepherd’s Pie made with ground turkey and delicious vegetables, topped with creamy mashed potatoes.


Ingredients

  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup peas
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat a splash of olive oil in a large skillet over medium heat. Add the chopped onions and minced garlic, sautéing until softened.
  3. Add the ground turkey, diced carrots, and peas. Cook until the turkey is browned.
  4. Stir in the tomato paste, broth, and Worcestershire sauce. Season with salt and pepper. Simmer for 5-7 minutes.
  5. Transfer the turkey mixture into a baking dish, spreading evenly.
  6. Spread the mashed potatoes over the turkey layer, creating peaks if desired.
  7. Bake for about 20-25 minutes until the tops of the mashed potatoes turn golden brown.
  8. Let it cool for a few minutes before serving.

For a complete meal, serve with crusty bread and a simple green salad. Leftovers can be stored for up to 3 days and reheated in the oven.
