- 1 pound ground beef
- 2 medium zucchinis, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1 cup cooked rice or pasta (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef in a large skillet over medium heat until fully cooked. Drain excess fat.
- Add onion and garlic to the skillet, cooking until softened.
- Stir in sliced zucchinis, diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5-7 minutes.
- If using, mix in cooked rice or pasta.
- Transfer the mixture to a baking dish and top with shredded cheese if desired.
- Bake in the preheated oven for 20-25 minutes until the casserole is heated through and the cheese is bubbly.
- Serve hot.
Notes
For extra flavor, try adding chopped bell peppers or mushrooms. You can also use different types of cheese or substitute ground beef with ground turkey for a lighter option.
