A comforting casserole featuring ground beef and fresh zucchinis, easy to prepare and customizable for a satisfying meal.


Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1 cup cooked rice or pasta (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat until fully cooked. Drain excess fat.
  3. Add onion and garlic to the skillet, cooking until softened.
  4. Stir in sliced zucchinis, diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5-7 minutes.
  5. If using, mix in cooked rice or pasta.
  6. Transfer the mixture to a baking dish and top with shredded cheese if desired.
  7. Bake in the preheated oven for 20-25 minutes until the casserole is heated through and the cheese is bubbly.
  8. Serve hot.

Notes

For extra flavor, try adding chopped bell peppers or mushrooms. You can also use different types of cheese or substitute ground beef with ground turkey for a lighter option.
