  • 2 medium zucchinis, sliced

  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a drizzle of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in the sliced zucchinis and diced tomatoes. Season with Italian seasoning, salt, and pepper, cooking for an additional 5-7 minutes.
  5. Transfer the mixture to a baking dish, spreading it evenly.
  6. Sprinkle shredded cheese over the top.
  7. Bake for 20-25 minutes until the cheese is bubbly and golden.
