- 2 medium zucchinis, sliced

- 1 can diced tomatoes (14.5 oz)

- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Heat a drizzle of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in the sliced zucchinis and diced tomatoes. Season with Italian seasoning, salt, and pepper, cooking for an additional 5-7 minutes.
- Transfer the mixture to a baking dish, spreading it evenly.
- Sprinkle shredded cheese over the top.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Let the casserole cool for a few minutes before serving.
