Description

Ingredients

  • 1 cup Greek yogurt
  • 2 eggs
  • 1 cup oats
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: add-ins such as blueberries, chocolate chips, or nuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix the Greek yogurt, eggs, honey, and vanilla extract until smooth.
  3. In another bowl, combine the oats, protein powder, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. If desired, fold in any optional add-ins.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
