Ingredients

- 2 eggs
- 1 cup oats
- 1/2 cup protein powder
- 1/4 cup honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Optional: add-ins such as blueberries, chocolate chips, or nuts
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix the Greek yogurt, eggs, honey, and vanilla extract until smooth.
- In another bowl, combine the oats, protein powder, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If desired, fold in any optional add-ins.
- Divide the batter evenly among the muffin cups.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
