Description

A flavorful Greek chicken marinade infused with herbs, lemon, and olive oil that transforms chicken into a culinary delight.


Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 lemon, juiced
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 4 chicken breasts

Instructions

  1. Whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, oregano, fresh parsley, salt, and pepper.
  2. Marinate the chicken breasts in a bag or dish, ensuring they’re coated with the marinade.
  3. Seal the bag or cover the dish, refrigerating for at least 30 minutes, preferably overnight.
  4. Grill or bake the chicken until cooked through, approximately 6-7 minutes per side on the grill, or bake at 400°F (200°C) for 20-25 minutes.
  5. Serve the chicken after letting it rest for a few minutes, paired with your favorite sides.

Notes

Marinade can be made ahead and stored for up to a week. Adjust seasonings according to taste. Optional: add honey for sweetness or red pepper flakes for heat.
