Description

Delightful grapefruit bars with a buttery crust and a zesty filling, dusted with powdered sugar.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh grapefruit juice
  • Zest of 1 grapefruit
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Additional powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Mix together the flour and powdered sugar in a medium bowl. Cut in the butter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared pan.
  3. Bake for 15 to 20 minutes or until the crust is lightly golden.
  4. Whisk together the eggs, granulated sugar, grapefruit juice, zest, baking powder, and salt in another bowl until well combined.
  5. Pour the grapefruit mixture over the baked crust and return to the oven.
  6. Bake for an additional 20-25 minutes, or until the filling is set.
  7. Allow to cool completely, then dust with powdered sugar before cutting into squares.

Store in an airtight container at room temperature for up to 3 days. Refrigerate for a week or freeze for up to 3 months.
