- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh grapefruit juice
- Zest of 1 grapefruit
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Additional powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Mix together the flour and powdered sugar in a medium bowl. Cut in the butter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared pan.
- Bake for 15 to 20 minutes or until the crust is lightly golden.
- Whisk together the eggs, granulated sugar, grapefruit juice, zest, baking powder, and salt in another bowl until well combined.
- Pour the grapefruit mixture over the baked crust and return to the oven.
- Bake for an additional 20-25 minutes, or until the filling is set.
- Allow to cool completely, then dust with powdered sugar before cutting into squares.
Notes
Store in an airtight container at room temperature for up to 3 days. Refrigerate for a week or freeze for up to 3 months.
