- 8 oz pasta (such as rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup corn (fresh or canned)
- 1/2 red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- Juice of 2 limes
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta. Begin by bringing a pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Once done, drain the pasta and let it cool.
- Prepare the veggies. In a large bowl, combine the cooled pasta with cherry tomatoes, diced cucumber, corn, finely chopped red onion, and the fragrant cilantro.
- Whisk the dressing. In a separate bowl, take the juicy limes and squeeze out the juice, then whisk in olive oil, salt, and pepper.
- Combine everything. Pour the dressing over your pasta salad mixture. Toss everything together gently until well combined.
