Description

Ingredients

  • 8 oz pasta (such as rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup corn (fresh or canned)
  • 1/2 red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta. Begin by bringing a pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Once done, drain the pasta and let it cool.
  2. Prepare the veggies. In a large bowl, combine the cooled pasta with cherry tomatoes, diced cucumber, corn, finely chopped red onion, and the fragrant cilantro.
  3. Whisk the dressing. In a separate bowl, take the juicy limes and squeeze out the juice, then whisk in olive oil, salt, and pepper.
  4. Combine everything. Pour the dressing over your pasta salad mixture. Toss everything together gently until well combined.
