Description

Delicious and hearty breakfast burritos that can be made in advance and frozen for busy mornings.


Ingredients

Scale
  • 6 large eggs
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked sausage or bacon
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • 6 large flour tortillas
  • Salsa (optional)

Instructions

  1. In a large skillet, scramble the eggs and season with salt and pepper. Add the diced bell peppers, onions, and cooked sausage or bacon. Cook until the veggies are soft.
  2. Remove from heat and stir in the shredded cheese until melted.
  3. Lay out the flour tortillas and evenly distribute the egg mixture among them.
  4. Roll up each burrito, folding in the sides as you roll.
  5. Wrap each burrito in foil or plastic wrap and place them in the freezer.
  6. To reheat, simply microwave or bake in the oven until heated through. Serve with salsa if desired.

Notes

You can customize the filling with your favorite vegetables. For a healthier option, use whole wheat tortillas.
