Ingredients

- 6 large eggs
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cooked sausage or bacon
- 1 cup shredded cheese
- Salt and pepper to taste
- 6 large flour tortillas
- Salsa (optional)
Instructions
- In a large skillet, scramble the eggs and season with salt and pepper. Add the diced bell peppers, onions, and cooked sausage or bacon. Cook until the veggies are soft.
- Remove from heat and stir in the shredded cheese until melted.
- Lay out the flour tortillas and evenly distribute the egg mixture among them.
- Roll up each burrito, folding in the sides as you roll.
- Wrap each burrito in foil or plastic wrap and place them in the freezer.
- To reheat, simply microwave or bake in the oven until heated through. Serve with salsa if desired.
Notes
You can customize the filling with your favorite vegetables. For a healthier option, use whole wheat tortillas.
