- 1 medium spaghetti squash
- 1 cup cooked ground turkey or beef
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the insides with olive oil and season with salt and pepper. Place the squash cut-side down on a baking sheet and roast for 30-40 minutes.
- Heat the cooked ground turkey or beef in a skillet over medium heat. Stir in the marinara sauce and let it bubble gently.
- Remove the squash from the oven, scrape out the strands, and mix them with the meat sauce.
- Generously fill each half of the spaghetti squash with the mixture, then sprinkle the tops with mozzarella and Parmesan cheese.
- Return the stuffed squash to the oven for an additional 10 minutes, until the cheese is melted and bubbly.
- Finish with a sprinkle of fresh basil and serve warm.
