- 2 tablespoons olive oil
- 1 lemon, sliced
- 1 cup cherry tomatoes
- 2 cups spinach
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large oven-safe pan over medium heat.
- Add garlic and sauté for 1 minute.
- Place the salmon fillets in the pan and season with salt and pepper.
- Add lemon slices and cherry tomatoes around the salmon.
- Transfer the pan to the oven and bake for 12-15 minutes, or until the salmon is cooked through.
- Remove from the oven, add spinach, and let it wilt for a couple of minutes.
- Serve warm.
Notes
Make sure not to overcook the salmon; it should be flaky and tender. You can add other vegetables for extra flavor, and marinating the salmon in lemon juice and herbs enhances the taste.
