Description

A comforting and wholesome lentil vegetable soup, perfect for chilly evenings and packed with nutrients.


Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the chopped onion, diced carrots, and diced celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and let it cook for another minute.
  4. Add the lentils, diced tomatoes, vegetable broth, cumin, thyme, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce the heat and let it simmer for about 30-40 minutes until lentils are tender.
  6. Taste and adjust the seasoning as needed.
  7. Serve hot, garnished with fresh parsley.
