Ingredients

- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat until it shimmers.
- Add the chopped onion, diced carrots, and diced celery. Sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and let it cook for another minute.
- Add the lentils, diced tomatoes, vegetable broth, cumin, thyme, salt, and pepper. Stir well.
- Bring to a boil, then reduce the heat and let it simmer for about 30-40 minutes until lentils are tender.
- Taste and adjust the seasoning as needed.
- Serve hot, garnished with fresh parsley.

For added flavor, consider adding additional herbs or a pinch of chili powder.
