Ingredients

  • 1 cup mixed vegetables (e.g., bell peppers, spinach, onions)
  • 1/2 cup dairy-free cheese (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  2. Sauté the mixed vegetables in olive oil over medium heat until tender, about 5 minutes.
