Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the mixed vegetables in olive oil over medium heat until tender, about 5 minutes.
- Whisk together JUST Egg, salt, and pepper in a bowl.
- Pour the egg mixture over sautéed vegetables in the skillet.
- Add dairy-free cheese on top if using.
- Start cooking on stovetop until edges begin to set.
