- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 4 flour tortillas
- 1 tablespoon olive oil
- Sour cream and salsa for serving
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the diced bell peppers and onions to the skillet and sauté until softened, about 3–4 minutes.
- Combine the shredded chicken, sautéed vegetables, and cheese in a mixing bowl.
- Place one flour tortilla in the skillet, add the chicken mixture on top, and cover with another tortilla.
- Cook until the bottom tortilla is golden brown, then flip to cook the other side for a few more minutes.
- Repeat the process for the remaining tortillas and filling.
- Slice the quesadillas into wedges and serve hot with sour cream and salsa.
Notes
For a crunchier texture, you can bake the filled quesadillas at 400°F for a few minutes before serving.
