Description

Warm, cheesy quesadillas filled with juicy chicken, bell peppers, and onions, perfect for a quick weeknight dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Sour cream and salsa for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced bell peppers and onions to the skillet and sauté until softened, about 3–4 minutes.
  3. Combine the shredded chicken, sautéed vegetables, and cheese in a mixing bowl.
  4. Place one flour tortilla in the skillet, add the chicken mixture on top, and cover with another tortilla.
  5. Cook until the bottom tortilla is golden brown, then flip to cook the other side for a few more minutes.
  6. Repeat the process for the remaining tortillas and filling.
  7. Slice the quesadillas into wedges and serve hot with sour cream and salsa.

Notes

For a crunchier texture, you can bake the filled quesadillas at 400°F for a few minutes before serving.
