- 1/4 cup of cornstarch

- 2 large eggs
- 1/4 cup of freshly squeezed lemon juice

- Whipped cream or lemon slices for serving (optional)
Instructions
- Whisk together the milk, sugar, cornstarch, and salt over medium heat. Cook, stirring constantly until the mixture thickens and comes to a gentle boil.
- Temper the eggs by whisking them in a separate bowl. Slowly add a small amount of the hot milk mixture to the eggs to temper them, then whisk the egg mixture back into the saucepan.
- Stir in the lemon juice, lemon zest, and butter. Continue to cook for another 2-3 minutes, stirring constantly until the mixture is well combined.
- Pour the pudding into serving dishes and refrigerate until set, about 2 hours.
- Serve chilled, topped with whipped cream or lemon slices if desired.
