  • 2 large eggs
  • 1/4 cup of freshly squeezed lemon juice
  • 1 tablespoon of lemon zest
  • 1 tablespoon of butter
  • Whipped cream or lemon slices for serving (optional)

Instructions

  1. Whisk together the milk, sugar, cornstarch, and salt over medium heat. Cook, stirring constantly until the mixture thickens and comes to a gentle boil.
  2. Temper the eggs by whisking them in a separate bowl. Slowly add a small amount of the hot milk mixture to the eggs to temper them, then whisk the egg mixture back into the saucepan.
  3. Stir in the lemon juice, lemon zest, and butter. Continue to cook for another 2-3 minutes, stirring constantly until the mixture is well combined.
  4. Pour the pudding into serving dishes and refrigerate until set, about 2 hours.
  5. Serve chilled, topped with whipped cream or lemon slices if desired.
