Description

A comforting and aromatic dish featuring tender fish fillets in a fragrant curry sauce with coconut milk.


Ingredients

  • 4 pieces of fish fillets (e.g., cod, tilapia)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon curry powder
  • 1 can coconut milk
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and curry powder, cooking for another minute.
  4. Gently add the fish fillets to coat in the curry mixture.
  5. Pour in the coconut milk and season with salt.
  6. Let it simmer for 10-15 minutes until the fish flakes easily.
  7. Garnish with fresh cilantro before serving.

Notes

Serve with jasmine rice or naan bread for a complete meal. Leftovers can be reheated with a splash of coconut milk.
