- 4 pieces of fish fillets (e.g., cod, tilapia)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon curry powder
- 1 can coconut milk
- 1 tablespoon vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and curry powder, cooking for another minute.
- Gently add the fish fillets to coat in the curry mixture.
- Pour in the coconut milk and season with salt.
- Let it simmer for 10-15 minutes until the fish flakes easily.
- Garnish with fresh cilantro before serving.
Notes
Serve with jasmine rice or naan bread for a complete meal. Leftovers can be reheated with a splash of coconut milk.
