- 1 can of tuna, drained
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- 1 cup spinach, chopped
- 1/2 onion, diced
- 1/2 bell pepper, diced
- Salt and pepper to taste
- Olive oil or cooking spray for greasing
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a baking dish with olive oil or cooking spray.
- Mix the eggs and milk in a large mixing bowl until well combined.
- Add the drained tuna, shredded cheese, chopped spinach, diced onion, diced bell pepper, along with salt and pepper to the egg mixture. Stir until combined.
- Pour the mixture into the prepared baking dish.
- Bake for 25-30 minutes until set and lightly golden on top.
- Cool slightly before slicing to serve.
Notes
Serve with a fresh salad, avocado, or whole-grain bread. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months. Experiment with different vegetables or herbs for variety.
