Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken thighs with salt, pepper, and paprika.
  2. Add the chicken to the skillet and cook until browned on both sides. Remove and set aside.
  3. In the same skillet, add the diced onion and minced garlic, cooking until softened.
  4. Stir in the rice, chicken broth, cream of chicken soup, and sour cream. Mix well.
  5. Return the chicken to the skillet, nestling it into the rice mixture.
  6. Bring to a simmer, cover, and cook for about 20-25 minutes (or until the rice is cooked and has absorbed the liquid).
  7. Remove from heat and let sit for a few minutes before serving.

Notes

For added flavor, use homemade chicken broth. You can customize with vegetables like peas or bell peppers. For spice, add cayenne pepper or diced jalapeños.
