- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced

- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add to the skillet. Cook until browned on both sides, about 6-7 minutes per side. Remove chicken and set aside.
- Add onion, garlic, and mushrooms to the same skillet; sauté until soft.
- Stir in rice, then add chicken broth and heavy cream. Bring to a simmer.
- Return chicken to the skillet, cover, and reduce heat to low. Cook for about 20-25 minutes or until rice is cooked and chicken is tender.
- Garnish with fresh parsley before serving.
