Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until browned on both sides, about 6-7 minutes per side. Remove chicken and set aside.
  3. Add onion, garlic, and mushrooms to the same skillet; sauté until soft.
  4. Stir in rice, then add chicken broth and heavy cream. Bring to a simmer.
  5. Return chicken to the skillet, cover, and reduce heat to low. Cook for about 20-25 minutes or until rice is cooked and chicken is tender.
  6. Garnish with fresh parsley before serving.
