- 4 bell peppers
- 1 cup cooked quinoa or rice
- 1 cup marinara sauce
- 1 cup mozzarella cheese
- 1/2 cup pepperoni slices
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Combine the cooked quinoa or rice, marinara sauce, mozzarella cheese, pepperoni, Italian seasoning, salt, and pepper in a bowl.
- Stuff each bell pepper with the tasty mixture.
- Drizzle the stuffed peppers with olive oil and place them in a baking dish.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted.
