Description

Delightful bell peppers filled with flavors of marinara, mozzarella, and pepperoni, offering a nutritious twist on classic pizza.


Ingredients

  • 4 bell peppers
  • 1 cup cooked quinoa or rice
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese
  • 1/2 cup pepperoni slices
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Combine the cooked quinoa or rice, marinara sauce, mozzarella cheese, pepperoni, Italian seasoning, salt, and pepper in a bowl.
  4. Stuff each bell pepper with the tasty mixture.
  5. Drizzle the stuffed peppers with olive oil and place them in a baking dish.
  6. Cover the dish with foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is melted.
