Description

A delightful blend of tropical flavors with tender chicken breasts in a creamy coconut and lime sauce.


Ingredients

  • 1 lb chicken breasts
  • 1 can coconut milk
  • 1 lime (juice and zest)
  • 2 garlic cloves (minced)
  • 1 tablespoon ginger (grated)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat and add the minced garlic and grated ginger, cooking until fragrant.
  2. Season the chicken breasts with salt and pepper, then add them to the pan, cooking until browned on both sides.
  3. Pour in the coconut milk and lime juice; add the lime zest. Stir everything together.
  4. Reduce the heat and let it simmer for 20 minutes or until the chicken is cooked through.
  5. Garnish with chopped cilantro before serving.
