- 1 lb chicken breasts
- 1 can coconut milk
- 1 lime (juice and zest)
- 2 garlic cloves (minced)
- 1 tablespoon ginger (grated)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat and add the minced garlic and grated ginger, cooking until fragrant.
- Season the chicken breasts with salt and pepper, then add them to the pan, cooking until browned on both sides.
- Pour in the coconut milk and lime juice; add the lime zest. Stir everything together.
- Reduce the heat and let it simmer for 20 minutes or until the chicken is cooked through.
- Garnish with chopped cilantro before serving.
