- 1 cup coconut milk
- 1 cup shredded coconut
- 1 cup breadcrumbs

Instructions
- Preheat the oven to 375°F (190°C).
- Mix the coconut milk, garlic powder, onion powder, salt, and pepper in a bowl.
- Coat the chicken breasts in the coconut milk mixture, then in shredded coconut, and finally breadcrumbs.
- Heat oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
- Transfer the chicken to a baking dish and bake for 15-20 minutes until cooked through.
- Serve hot and enjoy.
Notes
For extra flavor, consider marinating the chicken in the coconut mixture for a couple of hours before coating. It can also be made gluten-free by using crushed cornflakes or gluten-free panko instead of breadcrumbs.
