Description

Ingredients

  • 2 chicken breasts
  • 1 cup coconut milk
  • 1 cup shredded coconut
  • 1 cup breadcrumbs
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the coconut milk, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Coat the chicken breasts in the coconut milk mixture, then in shredded coconut, and finally breadcrumbs.
  4. Heat oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
  5. Transfer the chicken to a baking dish and bake for 15-20 minutes until cooked through.
  6. Serve hot and enjoy.

Notes

For extra flavor, consider marinating the chicken in the coconut mixture for a couple of hours before coating. It can also be made gluten-free by using crushed cornflakes or gluten-free panko instead of breadcrumbs.
