A delightful dish with tender chicken, rich spices, and a touch of warmth, perfect for cozy gatherings and weeknight dinners.

Ingredients

Scale
  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 yellow chili pepper, diced
  • 1 tablespoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a pan over medium heat until it shimmers.
  2. Add the chopped onion and minced garlic, sautéing until softened, about 3-4 minutes.
  3. Stir in the yellow chili, cumin, and turmeric, cooking for another minute.
  4. Add the chicken thighs and season with salt and pepper, searing each side briefly.
  5. Pour in the chicken broth, scraping the pan to pick up flavorful bits. Cover and simmer on low for 25-30 minutes.
  6. Garnish with fresh cilantro before serving.

Notes

This dish can be paired with basmati rice or naan, and it tastes even better as leftovers.
