Description

A fun and healthy Mediterranean-inspired meal packed with flavor, protein, and fresh vegetables.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Whole wheat pita or flatbreads
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup tzatziki sauce
  • Fresh parsley or dill for garnish

Instructions

  1. Combine the chickpeas, olive oil, garlic powder, onion powder, paprika, salt, and pepper in a bowl. Toss to coat the chickpeas evenly.
  2. Heat a skillet over medium heat and sauté the chickpea mixture until warmed through and slightly crispy, about 5-7 minutes.
  3. Cut the pita or flatbreads in half to create pockets.
  4. Fill each pocket with the sautéed chickpeas, diced cucumber, tomatoes, and red onion.
  5. Drizzle with tzatziki sauce and garnish with fresh parsley or dill.
  6. Pack into lunch boxes and enjoy!

Notes

Best served fresh, but can be delightful at room temperature. Store components separately to avoid sogginess.
