Ingredients

- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Whole wheat pita or flatbreads
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 1/2 cup red onion, thinly sliced
- 1/2 cup tzatziki sauce
- Fresh parsley or dill for garnish
Instructions
- Combine the chickpeas, olive oil, garlic powder, onion powder, paprika, salt, and pepper in a bowl. Toss to coat the chickpeas evenly.
- Heat a skillet over medium heat and sauté the chickpea mixture until warmed through and slightly crispy, about 5-7 minutes.
- Cut the pita or flatbreads in half to create pockets.
- Fill each pocket with the sautéed chickpeas, diced cucumber, tomatoes, and red onion.
- Drizzle with tzatziki sauce and garnish with fresh parsley or dill.
- Pack into lunch boxes and enjoy!
Notes
Best served fresh, but can be delightful at room temperature. Store components separately to avoid sogginess.
