Description

Delightful and fresh Chicken Lettuce Wraps filled with ground chicken and vibrant veggies, perfect for a light meal or gathering.


Ingredients

  • 1 lb ground chicken
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup black olives, sliced
  • 1 cup cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Lettuce leaves for wrapping (such as romaine or butter lettuce)
  • Olive oil for cooking

Instructions

  1. Heat the oil in a skillet over medium heat.
  2. Brown the chicken, stirring occasionally, until no longer pink (about 7-10 minutes).
  3. Add the diced tomatoes, red onion, black olives, cucumber, garlic powder, salt, and pepper. Cook for an additional 5-7 minutes.
  4. Cool the mixture slightly before assembling.
  5. Assemble the chicken and vegetable mixture in lettuce leaves.
  6. Garnish with crumbled feta cheese on top.
