- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup black olives, sliced
- 1 cup cucumber, diced
- 1/4 cup feta cheese, crumbled
- 1 tsp garlic powder
- Salt and pepper to taste
- Lettuce leaves for wrapping (such as romaine or butter lettuce)
- Olive oil for cooking
Instructions
- Heat the oil in a skillet over medium heat.
- Brown the chicken, stirring occasionally, until no longer pink (about 7-10 minutes).
- Add the diced tomatoes, red onion, black olives, cucumber, garlic powder, salt, and pepper. Cook for an additional 5-7 minutes.
- Cool the mixture slightly before assembling.
- Assemble the chicken and vegetable mixture in lettuce leaves.
- Garnish with crumbled feta cheese on top.
