Ingredients

  • 1 lb chicken breast
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Sauté the diced onions and minced garlic until translucent and fragrant.
  2. Stir in the diced carrots, celery, and grated ginger. Cook until the vegetables start to soften.
  3. Combine the chicken breast and chicken broth, bringing everything to a gentle boil.
  4. Simmer for about 20 minutes, or until the chicken is cooked through.
  5. Shred the cooked chicken into bite-sized pieces and return to the pot.
  6. Stir in the chopped kale and lemon juice, adding salt and pepper to taste, and simmer for an additional 5 minutes.
