- 1 lb chicken breast
- 4 cups chicken broth
- 2 cups kale, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Sauté the diced onions and minced garlic until translucent and fragrant.
- Stir in the diced carrots, celery, and grated ginger. Cook until the vegetables start to soften.
- Combine the chicken breast and chicken broth, bringing everything to a gentle boil.
- Simmer for about 20 minutes, or until the chicken is cooked through.
- Shred the cooked chicken into bite-sized pieces and return to the pot.
- Stir in the chopped kale and lemon juice, adding salt and pepper to taste, and simmer for an additional 5 minutes.
