- 2 cups cooked rice
- 1 lb chicken breast, grilled and diced
- 1 can black beans, drained
- 1 cup corn, cooked
- 1 cup diced tomatoes
- 1 avocado, diced
- 1 cup shredded lettuce
- 1 cup shredded cheese
- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
- Sour cream (optional)
- Salsa (optional)

Instructions
- Cook the rice according to package instructions.
- Grill the chicken breast until golden and cooked through, then dice into bite-sized pieces.
- Layer the rice at the bottom of a large serving bowl.
- Add the diced chicken on top of the rice.
- Layer the black beans, corn, diced tomatoes, avocado, lettuce, and shredded cheese over the chicken.
- Garnish with chopped cilantro and lime wedges.
- Serve with sour cream and salsa if desired.
