- 4 boneless, skinless chicken breasts
- 1 cup mozzarella cheese, shredded
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the mozzarella cheese, chopped spinach, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper.
- Cut a pocket into each chicken breast, carefully slicing through one side.
- Generously fill each chicken breast with the cheese and vegetable filling.
- Heat the olive oil in a skillet over medium heat and sear the stuffed chicken breasts for about 4-5 minutes on each side.
- Place the seared chicken in a baking dish and bake for 25-30 minutes.
- Let the chicken rest for a few minutes before slicing into it.
Notes
Make sure to pack the stuffing into the chicken pockets to prevent leaking. Use a meat thermometer to ensure chicken is cooked through.
