Description

A deliciously stuffed chicken breast filled with gooey mozzarella, earthy spinach, and tangy sun-dried tomatoes, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mozzarella cheese, shredded
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the mozzarella cheese, chopped spinach, sun-dried tomatoes, minced garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket into each chicken breast, carefully slicing through one side.
  4. Generously fill each chicken breast with the cheese and vegetable filling.
  5. Heat the olive oil in a skillet over medium heat and sear the stuffed chicken breasts for about 4-5 minutes on each side.
  6. Place the seared chicken in a baking dish and bake for 25-30 minutes.
  7. Let the chicken rest for a few minutes before slicing into it.

Notes

Make sure to pack the stuffing into the chicken pockets to prevent leaking. Use a meat thermometer to ensure chicken is cooked through.
