Description

Delightful Cheesy Spinach Quinoa Cups packed with flavor, perfect for a quick lunch, healthy snack, or appetizer.


Ingredients

Scale
  • 1 cup cooked quinoa
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (e.g. mozzarella or cheddar)
  • 2 eggs
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.
  2. Combine the cooked quinoa, chopped spinach, shredded cheese, eggs, milk, garlic powder, salt, and pepper in a large bowl. Mix well.
  3. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  4. Bake for 20-25 minutes, or until the tops are golden brown and set.
  5. Let cool for a few minutes before carefully removing the cups from the muffin tin. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. These cups can also be frozen for up to 3 months.
