Ingredients

- 1 cup cooked quinoa
- 2 cups fresh spinach, chopped
- 1 cup shredded cheese (e.g. mozzarella or cheddar)
- 2 eggs
- 1/4 cup milk
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.
- Combine the cooked quinoa, chopped spinach, shredded cheese, eggs, milk, garlic powder, salt, and pepper in a large bowl. Mix well.
- Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the tops are golden brown and set.
- Let cool for a few minutes before carefully removing the cups from the muffin tin. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. These cups can also be frozen for up to 3 months.
