- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans (15 oz), rinsed and drained
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped cilantro for garnish
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add 1 cup of quinoa to the heated skillet and toast for 2-3 minutes.
- Pour in 2 cups of vegetable broth and bring to a boil.
- Reduce the heat and let it simmer for about 15 minutes, until fluffy.
- Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper, cooking for an additional 5 minutes.
- Sprinkle 1 cup of shredded cheese on top, cover, and let it melt.
- Garnish with chopped cilantro before serving.
