Description

A one-pot meal that combines quinoa, black beans, melted cheese, and spices for a comforting and nutritious dish.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped cilantro for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add 1 cup of quinoa to the heated skillet and toast for 2-3 minutes.
  3. Pour in 2 cups of vegetable broth and bring to a boil.
  4. Reduce the heat and let it simmer for about 15 minutes, until fluffy.
  5. Stir in the black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper, cooking for an additional 5 minutes.
  6. Sprinkle 1 cup of shredded cheese on top, cover, and let it melt.
  7. Garnish with chopped cilantro before serving.
