Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until soft and caramelized (about 20-25 minutes).
- Stir in balsamic vinegar, sugar, salt, and pepper. Cook for an additional 5 minutes.
- Roll out the puff pastry on a floured surface and transfer it to a baking sheet.
- Spread cheese over the pastry, leaving a border.
- Top with the caramelized onions and sprinkle with thyme leaves if using.
- Bake for 20-25 minutes or until the pastry is golden brown.
- Let cool slightly before slicing and serving.
