- 1 can chickpeas, rinsed and drained
- 2 tablespoons buffalo sauce
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 whole wheat tortillas
- Lettuce leaves
- Diced tomatoes
- Avocado slices
- Ranch dressing (optional)
Instructions
- Mash the chickpeas slightly in a large bowl with a fork until chunky.
- Stir in the buffalo sauce, olive oil, lemon juice, salt, and pepper until well combined.
- Lay the tortillas flat and fill each with lettuce, chickpea mixture, diced tomatoes, and avocado slices.
- Drizzle with ranch dressing if desired.
- Roll the tortillas tightly and slice in half to serve.
Notes
