Description

Hearty and wholesome wraps filled with spicy buffalo chickpeas, fresh vegetables, and creamy avocado, ready in under 15 minutes.


Ingredients

Scale
  • 1 can chickpeas, rinsed and drained
  • 2 tablespoons buffalo sauce
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • Lettuce leaves
  • Diced tomatoes
  • Avocado slices
  • Ranch dressing (optional)

Instructions

  1. Mash the chickpeas slightly in a large bowl with a fork until chunky.
  2. Stir in the buffalo sauce, olive oil, lemon juice, salt, and pepper until well combined.
  3. Lay the tortillas flat and fill each with lettuce, chickpea mixture, diced tomatoes, and avocado slices.
  4. Drizzle with ranch dressing if desired.
  5. Roll the tortillas tightly and slice in half to serve.

Notes

Make sure not to over-mash the chickpeas for the right texture. Adjust buffalo sauce to match spice tolerance.
