Ingredients

  • 4 chicken breasts
  • 1 cup broccoli florets, cooked and chopped
  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the cooked broccoli, softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  3. Cut a pocket into each chicken breast, ensuring not to slice all the way through.
  4. Stuff each chicken breast generously with the creamy filling.
  5. Sear each stuffed chicken breast in a skillet with olive oil until golden brown on both sides, about 4-5 minutes per side.
  6. Transfer the seared chicken to a baking dish and bake for 25-30 minutes, or until fully cooked (165°F/74°C).
  7. Let the chicken rest for a few minutes before slicing.

Notes

For a spicier version, add chopped jalapeños or crushed red pepper flakes to the filling. Store leftovers in an airtight container in the fridge for 3-4 days.
