Crispy and delicious black bean baked taquitos, perfect for a casual dinner or as an appetizer.

- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 cup shredded cheese
- 10–12 small tortillas
- Cooking spray
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, grab a fork and mash the black beans until they’re mostly smooth but still a bit chunky.
- Mix in the corn, salsa, cumin, garlic powder, salt, and pepper.
- Lay one tortilla flat on your work surface and spoon about 2 tablespoons of the black bean mixture onto one end.
- Roll the tortilla tightly from the filled end, placing it seam side down on a baking sheet.
- Lightly spray the taquitos with cooking spray.
- Transfer the baking sheet to your preheated oven and bake for 20-25 minutes.
- Once done, remove them from the oven and let them cool for a minute.
- Serve them hot with your favorite salsa or creamy guacamole on the side.
Notes
If tortillas are stiff to roll, warm them in the microwave for 10-15 seconds.
