Description

Crispy and delicious black bean baked taquitos, perfect for a casual dinner or as an appetizer.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup shredded cheese
  • 1012 small tortillas
  • Cooking spray
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, grab a fork and mash the black beans until they’re mostly smooth but still a bit chunky.
  3. Mix in the corn, salsa, cumin, garlic powder, salt, and pepper.
  4. Lay one tortilla flat on your work surface and spoon about 2 tablespoons of the black bean mixture onto one end.
  5. Roll the tortilla tightly from the filled end, placing it seam side down on a baking sheet.
  6. Lightly spray the taquitos with cooking spray.
  7. Transfer the baking sheet to your preheated oven and bake for 20-25 minutes.
  8. Once done, remove them from the oven and let them cool for a minute.
  9. Serve them hot with your favorite salsa or creamy guacamole on the side.

Notes

If tortillas are stiff to roll, warm them in the microwave for 10-15 seconds.
