Description

A flavorful and filling vegan breakfast burrito that combines black beans, quinoa, fresh veggies, and spices wrapped in a warm tortilla.


Ingredients

  • 1 large flour tortilla
  • 1 cup black beans, cooked and drained
  • 1/2 cup quinoa, cooked
  • 1 cup spinach, chopped
  • 1 small avocado, diced
  • 1 medium tomato, diced
  • 1/4 cup onion, diced
  • 1/4 cup bell pepper, diced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Sauté the Aromatics: In a skillet, heat a little oil over medium heat. Add onion and bell pepper, and sauté until softened.
  2. Combine the Hearty Ingredients: Add the black beans, quinoa, spinach, cumin, salt, and pepper to the skillet. Stir until heated through.
  3. Prepare the Tortilla: Lay the tortilla flat and spoon the bean mixture onto the center. Top with diced avocado and tomato.
  4. Fold the Burrito: Fold the sides of the tortilla in and roll it up tightly from the bottom to the top.
  5. Grill to Perfection (Optional): Optionally, grill the burrito on a skillet for a couple of minutes on each side until golden brown.
  6. Garnish and Serve: Serve warm, garnished with fresh cilantro if desired.
