- 2 large sweet potatoes
- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
- Chopped green onions for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Pierce the sweet potatoes with a fork and bake for 45-60 minutes, or until tender.
- In a skillet over medium heat, heat olive oil. Add the diced onion and minced garlic, cooking until softened—about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spatula, and cook until browned, seasoning with paprika, salt, and pepper.
- Once baked, slice the sweet potatoes in half lengthwise and scoop out some flesh into a bowl.
- Combine the sweet potato flesh with the beef mixture and half of the cheddar cheese.
- Carefully stuff the sweet potato halves with the mixture, packing it in generously.
- Top the stuffed potatoes with the remaining cheddar cheese, and return them to the oven for 10-15 minutes, until the cheese is melted and golden.
- Garnish with chopped green onions if desired and serve hot.
Notes
Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
