Description

Comforting and hearty stuffed sweet potatoes filled with seasoned ground beef and topped with melted cheddar cheese.


Ingredients

  • 2 large sweet potatoes
  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pierce the sweet potatoes with a fork and bake for 45-60 minutes, or until tender.
  3. In a skillet over medium heat, heat olive oil. Add the diced onion and minced garlic, cooking until softened—about 3-4 minutes.
  4. Add the ground beef to the skillet, breaking it apart with a spatula, and cook until browned, seasoning with paprika, salt, and pepper.
  5. Once baked, slice the sweet potatoes in half lengthwise and scoop out some flesh into a bowl.
  6. Combine the sweet potato flesh with the beef mixture and half of the cheddar cheese.
  7. Carefully stuff the sweet potato halves with the mixture, packing it in generously.
  8. Top the stuffed potatoes with the remaining cheddar cheese, and return them to the oven for 10-15 minutes, until the cheese is melted and golden.
  9. Garnish with chopped green onions if desired and serve hot.

Notes

Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
