Ingredients

  • 2 chicken breasts
  • 1 cup BBQ sauce
  • 2 medium sweet potatoes
  • 2 cups coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube sweet potatoes, then toss with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until tender.
  3. Cook the chicken breasts until cooked through. Brush with BBQ sauce during the last few minutes of cooking.
