- 2 medium zucchinis, sliced
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 3 eggs
- 1/2 cup milk
- 1 cup breadcrumbs
- Salt and pepper to taste
- Olive oil for greasing
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil to ensure your casserole doesn’t stick!
- Combine in a large mixing bowl, the sliced zucchinis, chopped spinach, and crumbled feta cheese.
- Whisk together the eggs, milk, salt, and pepper in another bowl.
- Pour the egg mixture into the vegetable bowl and mix well.
- Fold in the breadcrumbs until everything is well combined.
- Transfer the mixture into the prepared baking dish, spreading it out evenly.
- Sprinkle the grated Parmesan cheese on top.
- Bake for 30-35 minutes or until the casserole is set and the top is golden brown.
- Let the casserole cool for a few minutes before serving.
