Description

A flavorful casserole combining zucchini, spinach, and feta cheese, topped with golden Parmesan for a delightful dish that’s perfect for any occasion.


Ingredients

  • 2 medium zucchinis, sliced
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 3 eggs
  • 1/2 cup milk
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with olive oil to ensure your casserole doesn’t stick!
  2. Combine in a large mixing bowl, the sliced zucchinis, chopped spinach, and crumbled feta cheese.
  3. Whisk together the eggs, milk, salt, and pepper in another bowl.
  4. Pour the egg mixture into the vegetable bowl and mix well.
  5. Fold in the breadcrumbs until everything is well combined.
  6. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  7. Sprinkle the grated Parmesan cheese on top.
  8. Bake for 30-35 minutes or until the casserole is set and the top is golden brown.
  9. Let the casserole cool for a few minutes before serving.

This casserole can be stored in an airtight container in the fridge for up to 3 days. Re-heats well.
