Description

Delightful baked blueberry donuts that are fluffy and healthier than typical fried versions, bursting with juicy blueberries.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries (or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the donut pan by spraying with cooking spray or lightly greasing.
  3. Combine the dry ingredients: flour, sugar, baking powder, baking soda, salt, and cinnamon in a large mixing bowl.
  4. Mix the wet ingredients in a separate bowl: buttermilk, vegetable oil, egg, and vanilla extract.
  5. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  6. Fold in the blueberries gently to keep them intact.
  7. Spoon the batter into the prepared donut pan, filling each mold about 2/3 full.
  8. Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
  9. Cool the donuts in the pan for 5 minutes before transferring them to a wire rack.
  10. Glaze if desired and enjoy!

Notes

These donuts are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
