Delightful baked blueberry donuts that are fluffy and healthier than typical fried versions, bursting with juicy blueberries.

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup fresh blueberries (or frozen)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the donut pan by spraying with cooking spray or lightly greasing.
- Combine the dry ingredients: flour, sugar, baking powder, baking soda, salt, and cinnamon in a large mixing bowl.
- Mix the wet ingredients in a separate bowl: buttermilk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- Fold in the blueberries gently to keep them intact.
- Spoon the batter into the prepared donut pan, filling each mold about 2/3 full.
- Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
- Cool the donuts in the pan for 5 minutes before transferring them to a wire rack.
- Glaze if desired and enjoy!
Notes
These donuts are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
