- 1 head cauliflower, riced
- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and bell pepper; sauté for 3-4 minutes until softened.
- Add the garlic, chili powder, cumin, salt, and pepper; stir well.
- Increase heat to medium-high and add the ground turkey. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the riced cauliflower, and mix well. Cook for another 5-7 minutes until the cauliflower is tender.
- Adjust seasoning if necessary, garnish with cilantro, and serve hot.
Notes
For a complete meal, consider adding spinach or kale in the last few minutes of cooking.
