Description

A quick and healthy meal featuring riced cauliflower and ground turkey, packed with vibrant flavors and spices.


Ingredients

  • 1 head cauliflower, riced
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and bell pepper; sauté for 3-4 minutes until softened.
  3. Add the garlic, chili powder, cumin, salt, and pepper; stir well.
  4. Increase heat to medium-high and add the ground turkey. Cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the riced cauliflower, and mix well. Cook for another 5-7 minutes until the cauliflower is tender.
  6. Adjust seasoning if necessary, garnish with cilantro, and serve hot.

Notes

For a complete meal, consider adding spinach or kale in the last few minutes of cooking.
