Ingredients

- 1 lb chicken breast, cooked and shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained
- 1 can (4 oz) diced green chilies
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese
- Chopped cilantro for garnish
Instructions
- Sauté the onion and garlic in a large pot until soft.
- Add the shredded chicken, white beans, green chilies, chicken broth, cumin, oregano, salt, and pepper to the pot, stirring to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Stir in the sour cream and cheese until melted and integrated.
- Serve hot, garnished with chopped cilantro.
Notes
For extra flavor, serve with warm crusty bread or corn tortilla chips. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
