Description

A warm and comforting white chicken chili filled with tender chicken, creamy white beans, and zesty green chilies.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese
  • Chopped cilantro for garnish

Instructions

  1. Sauté the onion and garlic in a large pot until soft.
  2. Add the shredded chicken, white beans, green chilies, chicken broth, cumin, oregano, salt, and pepper to the pot, stirring to combine.
  3. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  4. Stir in the sour cream and cheese until melted and integrated.
  5. Serve hot, garnished with chopped cilantro.

Notes

For extra flavor, serve with warm crusty bread or corn tortilla chips. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
