Description

A vibrant and zesty vegetable pickle medley, perfect for adding a fresh crunch to any meal.

Ingredients

Scale
  • 1 cup carrots, julienned
  • 1 cup daikon radish, julienned
  • 1 cup cucumber, sliced
  • 1 cup cabbage, shredded
  • 1 cup bell pepper, sliced
  • 1 cup vinegar (white or rice)
  • 1 cup water
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 12 fresh chili peppers, sliced (optional)

Instructions

  1. In a bowl, combine vinegar, water, sugar, and salt. Stir until the sugar and salt dissolve completely.
  2. Add minced garlic and sliced chili peppers to infuse the vinegar mix with delicious aromas.
  3. Layer the carrots, daikon, cucumbers, cabbage, and bell peppers in a clean glass jar.
  4. Pour the vinegar mixture over the vegetables, ensuring they are submerged.
  5. Seal the jar tightly and refrigerate for at least 24 hours before serving.

Notes

Use the freshest veggies for the best results; they should be crisp and vibrant. Adjust chili peppers to your taste and experiment with different vegetables if desired.
