Description

A comforting Italian dish featuring tender chicken, creamy potatoes, and vibrant green peas, perfect for family gatherings.


Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 pound potatoes, cut into wedges
  • 1 cup green peas
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large oven-safe skillet over medium heat.
  3. Brown the chicken in the oil for about 5-7 minutes on each side until golden brown, then remove and set aside.
  4. Sauté the garlic in the same skillet for 1 minute until fragrant.
  5. Add the white wine and deglaze the pan.
  6. Combine chicken broth, oregano, thyme, and potatoes; stir well.
  7. Nestle the chicken back into the pan among the potatoes.
  8. Cover the skillet and bake for 30 minutes.
  9. Add the green peas and bake for an additional 15-20 minutes until the chicken is cooked through.
  10. Garnish with chopped parsley before serving.

Notes

For added flavor, marinate the chicken with garlic, herbs, and olive oil a few hours before cooking.
