- 4 chicken thighs
- 4 chicken drumsticks
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup white wine
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 pound potatoes, cut into wedges
- 1 cup green peas
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Brown the chicken in the oil for about 5-7 minutes on each side until golden brown, then remove and set aside.
- Sauté the garlic in the same skillet for 1 minute until fragrant.
- Add the white wine and deglaze the pan.
- Combine chicken broth, oregano, thyme, and potatoes; stir well.
- Nestle the chicken back into the pan among the potatoes.
- Cover the skillet and bake for 30 minutes.
- Add the green peas and bake for an additional 15-20 minutes until the chicken is cooked through.
- Garnish with chopped parsley before serving.
Notes
For added flavor, marinate the chicken with garlic, herbs, and olive oil a few hours before cooking.
