- Spring roll wrappers
- 1 cup of carrots, julienned
- 1 cup of bell peppers, thinly sliced
- 1 cup of cucumber, julienned
- 1 cup of lettuce, shredded
- Fresh cilantro
- Fresh mint leaves
- Peanut butter
- Soy sauce
- Lime juice
- Honey or sugar
- Garlic, minced
- Water
Instructions
- In a bowl, combine the peanut butter, soy sauce, lime juice, honey or sugar, and minced garlic. Mix until smooth, gradually adding water to reach desired consistency.
- Fill a shallow dish with warm water. One by one, dip the spring roll wrappers into the water for a few seconds until pliable.
- On a softened spring roll wrapper, lay down a portion of julienned carrots, bell peppers, cucumber, lettuce, and sprinkle with cilantro and mint.
- Carefully fold the sides of the wrapper over the filling, then roll tightly from the bottom. Repeat until all ingredients are wrapped.
- Organize the spring rolls on a platter and serve with peanut sauce.
- Enjoy fresh, dipped into the creamy sauce!
Notes
Store leftover rolls in the fridge for up to two days; peanut sauce can be stored separately for about a week.
