Description

Delicious and colorful vegetable spring rolls served with a creamy peanut sauce, perfect for gatherings or a healthy snack.


Ingredients

  • Spring roll wrappers
  • 1 cup of carrots, julienned
  • 1 cup of bell peppers, thinly sliced
  • 1 cup of cucumber, julienned
  • 1 cup of lettuce, shredded
  • Fresh cilantro
  • Fresh mint leaves
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Honey or sugar
  • Garlic, minced
  • Water

Instructions

  1. In a bowl, combine the peanut butter, soy sauce, lime juice, honey or sugar, and minced garlic. Mix until smooth, gradually adding water to reach desired consistency.
  2. Fill a shallow dish with warm water. One by one, dip the spring roll wrappers into the water for a few seconds until pliable.
  3. On a softened spring roll wrapper, lay down a portion of julienned carrots, bell peppers, cucumber, lettuce, and sprinkle with cilantro and mint.
  4. Carefully fold the sides of the wrapper over the filling, then roll tightly from the bottom. Repeat until all ingredients are wrapped.
  5. Organize the spring rolls on a platter and serve with peanut sauce.
  6. Enjoy fresh, dipped into the creamy sauce!

Notes

Store leftover rolls in the fridge for up to two days; peanut sauce can be stored separately for about a week.
