Ingredients

  • 1 can coconut milk
  • 2 cups vegetable broth
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli)
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Cook ramen noodles according to package instructions; set aside.
  2. In a large pot, heat coconut oil over medium heat.
  3. Add chopped onion, garlic, and ginger; sauté until onion is translucent.
  4. Stir in curry powder and cook for another minute.
  5. Pour in coconut milk and vegetable broth; bring to a simmer.
  6. Add mixed vegetables and cook until tender.
  7. Stir in soy sauce, and season with salt and pepper.
  8. Serve ramen noodles in bowls, pouring the curry broth and vegetables over them.
  9. Garnish with chopped green onions before serving.
