Instructions
- Cook ramen noodles according to package instructions; set aside.
- In a large pot, heat coconut oil over medium heat.
- Add chopped onion, garlic, and ginger; sauté until onion is translucent.
- Stir in curry powder and cook for another minute.
- Pour in coconut milk and vegetable broth; bring to a simmer.
- Add mixed vegetables and cook until tender.
- Stir in soy sauce, and season with salt and pepper.
- Serve ramen noodles in bowls, pouring the curry broth and vegetables over them.
- Garnish with chopped green onions before serving.
