Description

Ingredients

Scale
  • 1 cup strawberries, pureed
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 3 tablespoons champagne
  • 1 cup white chocolate, chopped
  • Cocoa powder or crushed nuts for coating

Instructions

  1. In a saucepan, heat the heavy cream until just simmering. Remove from heat, allowing the cream to relax and infuse slightly with warmth.
  2. Add the chopped dark chocolate to the warm cream and let it sit for a minute, then stir to create a silky smooth ganache.
  3. Mix in the pureed strawberries and champagne until fully incorporated.
  4. Refrigerate the mixture until firm, about 2 hours.
  5. Once firm, scoop out small portions and roll them into balls.
  6. Melt the white chocolate in a microwave or double boiler until smooth.
  7. Dip each truffle in the white chocolate and then roll in cocoa powder or crushed nuts.
  8. Place the finished truffles on a parchment-lined tray and let them set before serving.

Notes

These truffles keep well in the fridge for up to a week, and they can be frozen for a month. Experiment with different coatings for unique flavors.
