Ingredients

- 1 cup strawberries, pureed
- 1 cup heavy cream
- 8 oz dark chocolate, chopped
- 3 tablespoons champagne
- 1 cup white chocolate, chopped
- Cocoa powder or crushed nuts for coating
Instructions
- In a saucepan, heat the heavy cream until just simmering. Remove from heat, allowing the cream to relax and infuse slightly with warmth.
- Add the chopped dark chocolate to the warm cream and let it sit for a minute, then stir to create a silky smooth ganache.
- Mix in the pureed strawberries and champagne until fully incorporated.
- Refrigerate the mixture until firm, about 2 hours.
- Once firm, scoop out small portions and roll them into balls.
- Melt the white chocolate in a microwave or double boiler until smooth.
- Dip each truffle in the white chocolate and then roll in cocoa powder or crushed nuts.
- Place the finished truffles on a parchment-lined tray and let them set before serving.
Notes
These truffles keep well in the fridge for up to a week, and they can be frozen for a month. Experiment with different coatings for unique flavors.
