Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and red pepper flakes, cooking for an additional minute.
  4. Add the diced tomatoes with their juices and the vegetable broth, bringing the mixture to a simmer.
  5. Stir in the butter beans and chopped rosemary, season with salt and pepper, and let it all simmer for about 10 minutes.
