Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and red pepper flakes, cooking for an additional minute.
- Add the diced tomatoes with their juices and the vegetable broth, bringing the mixture to a simmer.
- Stir in the butter beans and chopped rosemary, season with salt and pepper, and let it all simmer for about 10 minutes.
- Serve warm, garnished with Parmesan cheese and fresh basil if desired.
Notes
