Description

Ingredients

Scale
  • 2 cups cooked rice
  • 2 chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1/2 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Sauté the chicken in a large skillet with olive oil over medium heat until browned and cooked through, about 6-8 minutes.
  2. Add the diced bell pepper and pineapple chunks to the skillet and cook for another 2-3 minutes.
  3. Pour the teriyaki sauce over the mixture and stir to coat, simmering for about 5 minutes.
  4. Serve the chicken and pineapple mixture over the cooked rice.
  5. Top with sliced green onions and season with salt and pepper to taste.

Notes

For quick cooking, use pre-cooked rotisserie chicken. Leftovers can be enjoyed cold in a salad.
