Ingredients

- 2 cups cooked rice
- 2 chicken breasts, cut into bite-sized pieces
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup teriyaki sauce
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1/2 cup green onions, sliced
- Salt and pepper to taste
Instructions
- Sauté the chicken in a large skillet with olive oil over medium heat until browned and cooked through, about 6-8 minutes.
- Add the diced bell pepper and pineapple chunks to the skillet and cook for another 2-3 minutes.
- Pour the teriyaki sauce over the mixture and stir to coat, simmering for about 5 minutes.
- Serve the chicken and pineapple mixture over the cooked rice.
- Top with sliced green onions and season with salt and pepper to taste.
Notes
For quick cooking, use pre-cooked rotisserie chicken. Leftovers can be enjoyed cold in a salad.
