- 1 package of tater tots
- 1 pound of breakfast sausage
- 6 large eggs
- 1 cup of milk
- 1 cup of shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Optional: chopped onions, bell peppers, or any desired vegetables
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the breakfast sausage in a skillet over medium heat until browned.
- Toss in any vegetables and sauté until soft.
- Whisk together the eggs and milk in a bowl; season with salt and pepper.
- Layer the tater tots evenly in a greased 9×13 inch casserole dish.
- Pour the cooked sausage mixture over the tater tots.
- Pour the egg mixture over the sausage and tater tots.
- Sprinkle the cheese evenly on top.
- Bake for 30-35 minutes until set and bubbly.
- Allow to cool slightly before serving.

Make it ahead of time by preparing the night before and letting it sit in the fridge overnight.
