- 1 head of cauliflower, grated
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 2 tablespoons taco seasoning
- Salt to taste
- Chopped cilantro for garnish
- Lime wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic; sauté until softened.
- Stir in the diced bell pepper and continue to cook for a few minutes.
- Add the grated cauliflower and cook for about 5 minutes until it softens.
- Stir in the black beans, diced tomatoes, taco seasoning, and salt. Cook for another 5-7 minutes until everything is heated through.
- Serve hot, garnished with chopped cilantro and lime wedges.
