Description

A healthy, veggie-packed twist on traditional tacos, this skillet dinner combines rich flavors with wholesome ingredients.


Ingredients

  • 1 head of cauliflower, grated
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 tablespoons taco seasoning
  • Salt to taste
  • Chopped cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic; sauté until softened.
  3. Stir in the diced bell pepper and continue to cook for a few minutes.
  4. Add the grated cauliflower and cook for about 5 minutes until it softens.
  5. Stir in the black beans, diced tomatoes, taco seasoning, and salt. Cook for another 5-7 minutes until everything is heated through.
  6. Serve hot, garnished with chopped cilantro and lime wedges.
